Italian Passata

Traditional Italian tomato base sauce made with basil and garlic. Can be used with pastas or on a pizza base

THE INFO
10 mins prep 1hr cooking time
Makes 1.5 litres of sauce

THE INGREDIENTS
1.5kg tomatoes
1/2 red onion
6 cloves garlic
50ml red wine
1/2 tsp dried oregano
1/2 tsp chili flakes
1 bunch of fresh basil
2 tbs oil
Salt and pepper

EVOO to serve
THE HOW
Blitz the onion and garlic, in a food processor with some oil if you need some liquid
Sauté the onion and garlic (add the rest of the oil as required) until they have lost their raw smell
Blitz the tomatoes and add to the pot
Add the red wine, oregano, chili flakes salt and pepper
Simmer for 1hr
Add chopped basil and serve, or freeze
Use on its own, as a base sauce with meatballs or prawn pasta dishes or on a pizza base

Serve with EVOO drizzled over the top
